Lavender Lemon Sorbet
1/2 cup agave or honey
2 organic lemons, washed, juiced, and peels chopped
2 1/2 cups water
1 tablespoon dried lavender or a lavender essential oil to taste.
Bring sweetener, lemon juice, lemon peel, and water to a boil while stirring. Pour liquid through a strainer to get your sorbet mix. Add the dried lavender or a couple drops lavender essential oil.
Place mix into a glass container and freeze for 2 – 3 hours. When mix reaches a mushy consistency, remove from freezer and blend in a blender.
Freeze again until firm.
Allow to soften a bit before serving.
